これにはちゃんと理由がある。すすると麺と一緒に空気が入り、熱いつゆが素早く冷める。食べながら、香りと味をより多く鼻へ運ぶこともできる。ワインを飲む前に香りをかぐのと同じだ。大きな音は、作った人においしいと伝える合図にもなる。
この習慣は昔、麺が立ったまま急いで食べる屋台の食べ物だったころに始まった。今度そういう店で麺を食べるときは、自分でも試してみてほしい。ここでは少しくらいの音は無作法ではない。褒め言葉なのだ。
