Na talerzu ląduje biały ryż, polany duszoną czerwoną fasolą, oraz kawałek mięsa, zwykle kurczaka, z odrobiną sałatki z boku i smażonym zielonym bananem, jeśli masz szczęście. Nazywa się to la bandera, czyli flaga, bo kolory na talerzu to kolory tego kraju. Ludzie jedzą to przez większość dni tygodnia i się tym nie nudzą.
Warto znać rytm, a nie przepis. Jeśli zjawisz się głodny o trzeciej po południu, dobre miejsca będą już puste, a jedzenie skończone. Jedz wtedy, kiedy jedzą wszyscy inni. Potem poproś o małą, mocną kawę, wypij ją na stojąco i wróć w upał.
