정오가 막 지나면 거리는 조용해져요. 셔터가 반쯤 내려가 있어요. 가려던 사무실은 문을 닫았고, 그 옆의 작은 식당은 갑자기 사람들로 가득 차요.
도미니카 공화국에서는 저녁이 아니라 점심이 하루의 진짜 식사예요. 나오는 접시에는 흰쌀밥 위에 부어 낸 붉은 강낭콩 스튜, 그리고 보통 닭고기인 고기 한 조각이 담기고, 곁들여 작은 샐러드와 운이 좋으면 튀긴 초록 플랜틴도 나와요. 이 음식은 라 반데라, 즉 국기라고 불리는데, 접시 위의 색깔들이 이 나라 국기의 색깔이기 때문이에요. 사람들은 거의 매일 이 음식을 먹으면서도 질려 하지 않아요.
알아 두면 좋은 것은 조리법이 아니라 리듬이에요. 오후 세 시에 배고픈 채로 나타나면 좋은 식당들은 이미 텅 비어 있고 음식도 다 떨어져 있을 거예요. 다른 사람들이 먹을 때 함께 먹어요. 그런 다음 서서 진한 커피 한 잔을 마시고, 다시 더위 속으로 나가요.
