Na ilha de São Miguel, nos Açores, existe uma vila chamada Furnas onde o próprio chão está vivo de calor. Vapor sobe por buracos no solo, e a terra fica quente sob os pés. Esse lugar fica em cima de um vulcão, e as pessoas ali aprenderam a fazer o vulcão trabalhar para elas de uma forma deliciosa.
Cedo pela manhã, um cozinheiro enche uma panela alta com carne, linguiça, repolho e outros vegetais. Depois, usando luvas grossas, ele desce a panela coberta em um buraco cavado no chão quente e cobre tudo de novo com terra. Não há fogo nem fogão. Só o calor do vulcão vai fazer a cozinha, devagar e com cuidado, por cerca de sete horas.
Quando a panela é retirada de novo, a comida lá dentro está macia e suculenta, cheia de sabor por causa do calor longo e lento. O ar carrega um leve cheiro de enxofre vindo do chão fumegante. Famílias e visitantes se reúnem em mesas compridas, e o vapor sobe dos pratos enquanto comem uma refeição que a própria terra preparou.
