白い水の畑

夜明けとともにポリーは町を発ち、海岸に沿って南へ向かった。広い湾とマリーナを過ぎると丘がしだいに退き、小さな川の河口で土地が平らに広がった。そして、それが見えた。浅い長方形の池が何百も、海ぎわまでびっしりと並び、そのひとつひとつが朝の空を鏡のように映している。セチョヴリェの塩田だ。ここでは七百年以上も前から塩がつくられている。

Polly left the town at first light and followed the coast south, past a wide bay and a marina, until the hills stepped back and the land lay flat at the mouth of a small river. Then she saw them. Hundreds of shallow rectangular pools lay side by side to the edge of the sea, each one holding the morning sky like a mirror. These are the salt pans of Sečovlje, and salt has been made here for more than seven hundred years.

その方法はばかばかしいほど単純で、気が遠くなるほど根気がいる。水路から海水を引き入れ、夏のあいだに池から池へと移していく。次の池は前の池より少し浅く、少しあたたかい。そのあいだに太陽が水を持ち去り、塩だけを残していく。ポリーは足首まで池に入ってみた。塩水は風呂のようにあたたかく、塩がたっぷり溶けているせいで、足が軽く感じられた。

The method is absurdly simple and impossibly patient. Sea water is let in through channels and moved from pool to pool over the summer, each one shallower and warmer than the last, while the sun lifts the water away and leaves the salt behind. Polly waded in ankle deep. The brine was warm as a bath and so heavy with salt that her feet felt lighter in it.

いちばん奥の池では、塩職人たちがもう仕事を始めていた。長い木の熊手でゆっくりと水を押していくと、濡れた白い結晶が集まって小さな円錐の山になる。機械はない。あるのは木と肩と、中世から塩田が知っている同じゆったりとしたひと押しだけだ。ポリーは熊手の柄の端に乗り、山がひと粒ずつ育っていくのを眺めた。

In the last pools the salt workers were already at it, pushing long wooden rakes slowly through the water so that the wet white crystals gathered into small cones. No machines, just wood and shoulders and the same slow stroke the pans have known since the Middle Ages. Polly rode the end of a rake handle and watched a cone grow, grain by grain.

職人のひとりがしゃがみこみ、池の底をポリーに見せてくれた。泥ではなかった。それは小さな藻と鉱物でできた、黒くなめらかな生きた膜で、職人たちが畑のように育て、十四世紀から手入れを続けてきたものだった。この膜が泥を下に、塩を上にとどめておくから、ここの塩は清らかで白い。ポリーは、自分がとても古い種類の農場に立っているのだとわかった。

One worker crouched and showed her the floor of the pool. It was not mud. It was a dark, smooth, living skin of tiny algae and minerals that the workers cultivate like a garden and have tended since the thirteen hundreds. It keeps the mud below and the salt above, which is why the salt here comes out clean and white. Polly understood she was standing in a very old kind of farm.
